Roux will soon be joining RockCreek and Vif in the trifecta of new food and drink respites that are opening this summer on Fremont Avenue. Matthew Lewis says his restaurant in the old Buckaroo Tavern space (he admits it took him awhile to figure out the Roux/Roo connection) is still on track for an end of August opening.

A few facts:
Roux is 2300 square-feet and will seat 85; there's an open kitchen where, according to Matt, "The always charming and good looking Mikey (Robertshaw) will be creating tasty treats;" Ian Cargill, formerly of Tavern Law, Vito's, lotsofothercoolplaces, will be in charge of the bar; po boys by day and sit-down dinner by night starting at 5 pm (and beignets and Herkimer coffee everyday starting at 8 am); Matt says after Roux has been open for a week or so, he'll launch weekend brunch.
