Piggyback Deli, that cool gas station concept in Lynnwood, has shuttered.
Owner Michael LaRoche says it's basically morphed into Terra Cole Butchery in West Seattle.
Piggyback has melded into Terra Cole. We got the pastrami sandwiches, merguez, all the sausages, bacon, etc. happening there. Tim (owner) is a long time colleague. Trace (chef) was my sous back when I was at Oddfellows, and he used to be at Quinn's. So a big happy merger of family. Just no longer in Lynnwood. Tim and I actually collaborated on the business plan for Clove & Hoof, but the funding was a struggle. I decided to do Piggyback as a cheap version because it didn't need money. He kept waiting it out and scored. So now all of our goals are back together.
LaRoche has taken a job at Walla Walla Community College to run the culinary program's catering arm. His Piggyback partner, Nathan Thomas, is now working full-time at Terra Cole, which LaRoche says is in the permitting process of adding beer and wine.
