The charcuterie shop formerly known as Dot's Delicatessen will close after dinner service Feb. 8 to begin a remodel that will result in the grand reveal of Dot's Charcuterie & Bistrot on Wednesday, Feb. 26.

The new incarnation will serve lunch Wed-Sun, 11 am to 3 pm, and dinner Wed-Sat, 5 to 10 pm. (The dinner menu will feature classics, like Coq au Vin, Blanquette de Porc, and Cassoulet and Côte de Boeuf). The restaurant will be available for private parties Sun-Tues evenings. And not too far down the road, owner Miles James will offer classes in butchering and charcuterie prep. Dining room manager Anna Wallace (Seattle Seltzer Co. proprietor and former bar manager of Walrus & the Carpenter) promises a redesigned beverage program.
