Vegan ice cream sandwich truck Seattle Cookie Counter parks all over the city each week, including the Umpqua Bank lot in Upper Queen Anne every Wednesday from noon to 6 p.m. For Halloween, the truck is taking pre-orders for individually wrapped mini-cookies in compostable packaging, and apparently selling ice cream sandwiches in a TBA location in West Seattle with the help of a zombie ice cream man.
The sweets seller raised almost $19,000 on Kickstarter last summer to launch the company, which serves dozens of dairy-free ice cream sandwich flavor combos out of a vintage VW bus.
