Nuflours Opens Bright and Early Tomorrow in Capitol Hill

After six years, the brick-and-mortar dream becomes a gluten-free reality.

Attention wheat-free early risers: Nuflours launches its Capitol Hill cafe early tomorrow morning, and owners Bedell and Phebe Rossi are busy finishing up final details before doors open at 7 a.m. The gluten-free bakeshop in the former North Hill Bakery space on 15th Ave. will serve homemade mini quiches, hand pies, empanadas stuffed with spinach and feta, Good Morning muffins with an egg baked in the middle, and more on opening day. Plus, coffee from Vita and Conduit.

Bedell told Eater this morning that plenty of people have been "poking their heads in" to ask when they can start buying the likes of salted caramel brownies and cinnamon rolls. "We can feel the support of the community just waiting for us to open, and it makes it not scary but exciting," Bedell says. "Phoebe and I have been working on this and dreaming about this for six years. It's huge, were overjoyed, we're fired up, and we can't wait."
