Manny Arce of Poquitos Ventures to White Center for Pizza

Seattle is home to a lot of restaurants, and among them are hidden gems some Seattleites just aren't unearthing. To help guide us to these potential discoveries, we've enlisted some of our city's many food luminaries to share with us their under the radar recommendations for a weekly feature dubbed Dining Confidential.

Poquitos Executive Chef Manny Arce knows his pizza. The Southern California native got his start in restaurants during high school, when he worked at an independent pizza restaurant. The job inspired him to go to culinary school, and the rest is history. Arce has also completed culinary internships in Spain and Italy, and has worked in kitchens at Union, La Spiga, and Bastille.

Proletariat Pizza in White Center is a favorite of Arce and his family:

My go-to off the radar spot is Proletariat Pizza in White Center. They have great food and happy hour runs from 3-6pm everyday! It’s also near our house and they have a killer pepperoni pizza, which is one of the few things my kid will eat. Yes, she rules the family. My wife and I order a pie and a few Rainer Tallboys and Brooklyn does her three-year-old thing. Oh, and Full Tilt is across the street, so that doesn’t suck.
