Details are emerging on the restaurant, Shaker + Spear, which will seat 65 and serve a seafood-centric menu. Heading the kitchen is Chef Walter Pisano, who has been the executive chef at Tulio Ristorante for more than 20 years. The menu will be complemented by a Northwest-focused beer and wine list.
Pisano will also oversee new bar Pennyroyal, which "takes inspiration from old-world European style bars" with a menu of "aged spirits, seasonal sharable punches, and quaint bar snacks prepared front-and-center by knowledgeable barkeeps." Both spots will operate independently of one another, with separate entrances, and will be located in the ground floor of the Palladian.
