Paseo is reopening soon. That's what new owner Ryan Santwire told The Seattle Times today after a federal judge officially approved the bankruptcy sale of the shuttered restaurant. "We got the people, we got the stuff," Santwire tells the paper. "When it's all said and done, it should be just opening the doors again."

Last week, Santwire purchased Paseo for $91,000 at auction in the federal courthouse. Santwire bought the name, equipment, and basically everything except the recipes, which original owner Lorenzo Lorenzo says are his creation that he has never licensed to anyone.
Just to up the intrigue, Santwire and a group of longtime kitchen crew he's re-hiring spent a top-secret day in the kitchen at RockCreek across the street from the Fremont shop recreating the sauces and sandwiches. We'll soon know whether or not they nailed the recipes.
