Chef Joe Holberg, a line cook at Poppy, is showing off his travel experiences at an upcoming pop-up at Bloom in Ballard. Holberg is fresh off a five-year stint as a yacht chef in the Mediterranean, and he "often traveled to very remote locations where most of my provisioning was done through open markets which gave me a flexible approach and a great appreciation of the simple yet delicious flavors of the Mediterranean."
The December 15 pop-up is dubbed "From Seattle to the Cyclades" and includes five courses: grilled octopus, cauliflower soup, trotters and hocks, spiced sous-vide lamb sirloin, and dark chocolate terrine. The prix-fixe event costs $42 per person, with gratuity included. Reservations are required and can be made through the Dyne mobile app for iOS and Android.
