Ethan Stowell's Red Cow Opens Tonight

We've been counting down the days until Ethan Stowell would welcome steak frites fans into new restaurant Red Cow, and it's finally happening! The Seattle restaurateur announced today that the Madrona resto will be open for service starting at 5 p.m. tonight, Feb. 10.

He took over the old Restaurant Bea (formerly June, formerly Cremant) space a few months ago, and will also be opening small, fancy spot Noyer next door in late spring/early summer. The 1,800 square foot room with room for 55 (35 in the dining room, 20 in the bar) is a departure from his usual pasta-focused menus. With French brasserie classics like Pate de Campagne, Moules Frites, beef tartare, and the like, the menu has a heavy emphasis on steak frites.

Diners can choose from six different cuts of beef for their Frenchy meat 'n potatoes entrees, hitting on price points from $21 for the Hanger steak, all the way up to a $75 bone-in ribeye for two, with New York strip, Filet Mignon, and such in between. Each is available with one of four classic sauce pairings: Béarnaise, compound butter, red wine reduction, or horseradish cream.

The kitchen will be run by Thom Koschwanez, who has worked with Stowell on events for the past year. Red Cow will be open from 5pm to 10pm daily, until 11pm on Friday and Saturday. Reservations can be made online at www.ethanstowellrestaurants.com or by calling 206.454.7932.
