Want some Serious Pie but don't want to drive to Belltown or South Lake Union to get it? Come summer, you won't have to. Tom Douglas is opening a new location of his beloved pizza shop in Capitol Hill, according to CHS. One of Eater's 38 Essential Pizzerias Across America and a reader favorite, Serious Pie is planning to launch a third shop in the former Utrecht art supply store and Volvo dealership location at Melrose and Pike that will also house a new Starbucks roasting facility.
Douglas and Starbucks have partnered together in different ways over the years: Douglas serves Starbucks in his restaurants and at Assembly Hall Juice & Coffee and teamed up with the coffee giant to create a blend in 2008.
Per the plan, a cafe will sit to the left of the building's entrance while the restaurant is in the works for the area along Minor that used to house Utrecht.
CHS posted a diagram rendering that includes the approximately 2,500 to 2,800-square-foot restaurant and roasting facility. Douglas HQ declined comment, but we do know that (assuming it gets the green light on permitting from Puget Sound Clean Air Agency) Starbucks hopes to move into the roastery by August.
Douglas was close to opening a falafel shop near the Paramount a few years back that didn't happen--a reminder that plans can and do change. Eater will post updates as we have them.
