Blue Water Taco Grill & Cantina is about a month away from opening in the former Michelangelo's Bistro space in the Seattle Center Armory. Owner Peter Cassidy tells Eater he's "working like crazy" to start serving the local chain's chipotle prawns, veggie chorizo, and barbacoa tacos (plus happy hour margaritas) by Monday, May 19.
