Vegetarians, cover your eyes. It's almost time for Eater's epic meat-centric theme week. Starting July 7, we're tucking into filet mignon, racks of ribs, offal, charcuterie (you get the idea) for a full five days, starting on Monday with a mondo map of Seattle's iconic meat dishes.
Which begs the question, where can you find the most legendary hunks of meat in this city? Tucked inside a sandwich at Paseo? Slathered in sauce at Pinky's? Between buns at Red Mill? Served bloody at The Metropolitan Grill?
