Chef Jason Wilson's award-winning restaurant Crush has a brand new concept with the menu split into dishes based on an ingredient (called a 'Taste') which come with an appropriate beverage pairing (cocktail, sake, local craft beer or 'hyperlocal artisan wine'). Described in a press release as "...a new focus where empowering the guest is paramount to telling a story" a 'taste' is $17 (apart from Jasmine, which has foie gras for $21) with a pairing for $10. A 12-course chef's tasting menu is available for $150 per person. Tastes include Warm Earth (organic baby beets, pistachio, ricotta, coffee flour, rye, watercress) and Truffle (egg, arugula, onion, Wagyu Beef Steak Tartar, vodka, parmesan).
