Opening today at the stoke of noon: Brendan McGill's Hitchcock Deli Georgetown, the brand new sibling of the Hitchcock chef's delicatessen and charcuterie on Bainbridge Island.
McGill tells Eater that he's rolling out a new menu in the Georgetown store that includes some greatest hits from Bainbridge while adding different charcuteries, small plates, and house-made sausages into the mix. Plus, the Seattle deli serves draft beer, a bigger wine selection, and drip and toddy coffee. The spot is open until 7 p.m. this evening, with regular hours and a full menu starting up in the coming days.
Eater photographer Suzi Pratt checked out the space and followed Eater's 2013 Chef of the Year into the kitchen to watch him make pork and garlic sausage, smoke applewood bacon, and tie up the beef eye of round for our the shop's roast beef.
