Coyle's Bakeshop is opening a brick-and-mortar bakery in Greenwood, and it's about time. Pastry chef Rachel Coyle started selling her beautifully displayed almond cream croissants, chocolate layer cake, and plum cardamom streusel on Saturdays inside Fremont cookbook store Book Larder in May of 2013; people started pleading for a permanent home for the pastries before finishing their first Coyle-baked croissant.
You can put money on it: The line will spill out the door of Coyle's new 1,200-square-foot space in a former print shop on 83rd and Greenwood Ave. N when it opens this winter. Coyle says the bakery, designed by Atelier Drome architects (Juicebox, Ethan Stowell Restaurants,) will seat about 25 inside, with outdoor tables lining the space's wall along 83rd. "Greenwood is a neighborhood that caught my eye in the last six months," Coyle tells Eater. "It has lots of potential and I'm excited to be going into a neighborhood that's about to grow and change."
After spending time in the kitchen at The Herbfarm, Le Pichet, and Cafe Presse, Coyle started the pop-up as a monthly affair; it became a Saturday morning ritual for the masses last March. The last weekly bakeshop at Book Larder is scheduled for this Saturday. Coyle says it will return monthly through autumn. If the schedule keeps, Coyle's Bakeshop will launch in Greenwood this January.
