Huxley Wallace Collective's Josh Henderson told Eater earlier this month that, "come hell or high water" he's opening Quality Athletics in time for Seahawks regular season opener on Thursday.
While the dining room is buzzing with staff putting finishing touches on the space, the rooftop garden from Seattle Urban Farm Company is a much quieter scene. Yesterday, chefs checked in on the dinosaur kale, tomatoes, and string beans that will show up on the menu when it debuts next week.
