Caffe Vita operates six coffee bars in the Seattle-area, plus outposts in Olympia and Portland. Vita opened a cafe on New York's Lower East Side (next to Seattle-based pizzeria Via Tribunali) in 2012, and L.A.'s Silver Lake neighborhood in 2013. Now, owner Mike McConnell (also an investor in several Seattle restaurants, including Bourbon and Bones and Wandering Goose) and team are planning a new Vita inside the upcoming Black Mountain performance space in Belltown.
McConnell is also launching a Vita in the former Diva Espresso location at 4480 Fauntleroy Way SW in West Seattle that will open sometime in 2015. On the Eastside, Vita just wrapped up a pop-up at Rudy's Barbershop on Main St. in Bellevue and is considering opening a permanent coffee bar in downtown Bellevue.
And while they're at it, staff on the East Coast are launching a new roastery in Brookyln's Bushwick neighborhood. The space will include areas for cupping and customer eduction and open by the end of the year.
