John Sundstrom completes the last part of his new restaurant trifecta today when Slab Sandwiches + Pie opens in Capitol Hill's Central Agency Building. With a separate entrance around the corner from the chef's Lark and Bitter/Raw, Slab serves breakfast sandwiches like farro bread toast with smashed avocado and tomato ginger jam and lunch options including 12-hour brisket and Cubanos with pork confit, jamon, grilled scallion aioli, smoked pickles, and comte. Add crispy chicken skin to anything for an extra couple of bucks.

Plus: savory and sweet pie including a Slab meat pie stuffed with short ribs, caramelized onion, and hedgehog mushrooms and s'mores pie. Espresso comes from Vita, plus pantry items like good olives and salumi to pull together a picnic.

Vancouver's Meat & Bread is opening right across the hall, making the building an official Seattle sandwich destination.
