Roux executive chef Mike Robertshaw is leaving Seattle to take a new job with a hospitality company based in the Ozarks that, per a press release, is "focused on revitalizing downtown areas." The former Restaurant Zoe, Hitchcock, and Union chef announced he's moving to northwest Arkansas to start work on a "farm-driven restaurant." Robertshaw departed Local 360 in 2013 to open Roux with Matt Lewis. In a recent Eater feature, the chef talks about his culinary roots, career influences, and love of meat.
Robertshaw's final day at Roux is February 13. That night's menu will include tete de cochon, foie gras, and braised rabbit specials; reservations are recommended. And heads up, chefs: Roux is taking names for a new chef de cuisine.
