Blu Sardinia will officially start serving its Mediterranean cuisine tonight in Redmond. The restaurant is overseen by Sardinian native Fabrizio Loi, who is incorporating his island's traditional dishes with those of the Italian mainland. Italian chef Mario Ruzzoli is leading the kitchen.
The restaurant's sleek, modern interior complements the beautifully-plated dishes, but the food itself is decidedly rustic in origin. Sardinia has one of the world's highest concentrations of people living to be over 100 years old, thanks in large part to the consumption of red wine and a mostly plant-based diet.
With the tagline "Eat well, live well," Blu Sardinia gussies up traditional Sardinian and Italian dishes like caprese salad with buffalo mozzarella, steamed octopus, homemade pastas, and traditional Sardinian flatbread. The restaurant's centerpiece is a wood-fired oven, where skilled hands churn out traditional thin-crust pizza.
For now, Blu Sardinia is open for dinner only, though lunch and breakfast are coming soon.
