Willows Inn cook Jason Aldous is toying with the idea of opening a restaurant in Seattle, and it sounds like a locavore's wet dream. The approach is described as "contemporary ultra local fine dining," and the eventual restaurant will be called Wild Roots.
Aldous is testing it out with a Valentine's Day pop-up showcasing ingredients sourced from local farmers and fishers, as well as wild plants Aldous has himself foraged. Diners will be treated to "8+ courses of locally foraged and farmed food for one night only." Tickets are available via Kickstarter. Aldous plans more pop-ups in the future as he gears up for a restaurant of his own; details on future events will be available on Facebook.
