Paseo quietly unlocked its doors a few minutes before noon Thursday, and shortly after news crews and customers swarmed the space. New owner Ryan Santwire seemed surprisingly calm on opening day.
Santwire confirms with Eater that the kitchen crew is the same, with many working for Paseo's former owner for a decade. Even the guy behind the cash register has been on the job for five years. "I was really nervous at first," Santwire says. But as the day went on and the first sandwiches were served he began relax, since running the shop is "second nature" to staff. Santwire says that the menu and vendors are exactly the same.
