Josh Henderson's forthcoming Vestal is preparing to open in March, but he's giving diners the opportunity to test out the food at a pop-up held at Quality Athletics on November 24.
The dinner will be paired with a screening of Henderson's battle in Knife Fight, a cooking competition on Esquire Network. The preview menu will be available throughout dinner hours and will feature a first course of pickled celery, anchovies, hazelnuts, chiles, aged parmesan, and olive oil; a main course of sprouted lentils, mirepoix, chicken jus, charred carrot, confited chicken, and herbs; and a dessert of butter-roasted apples and pears, toasted oat ice cream, maldon salt, and spiced oats. Wine and cocktail pairings will be available.
The dinner costs $35, or $55 with the pairings.
