Seattle's newest hotel, the Palladian, officially opened today, and with it, two new spots to eat and drink.
New restaurant Shaker + Spear served its first breakfast customers this morning, and dinner will follow this evening. The menu is seafood-centric, with dishes drawing heavily on regional ingredients. The restaurant will add brunch service on February 21 and lunch on February 23.
The hotel also includes a new bar, Pennyroyal, which opens today, too. The old world-style spot focuses on aged spirits and house-made ingredients like liquor infusions, vermouth, grenadine, tonic, and bitters. The menu includes a rotating punch and small bites.
Both concepts are overseen by chef Walter Pisano, who also runs Tulio Ristorante downtown.
