When Jason Franey departed Seattle fine dining institution Canlis last year, the national search began for his replacement.
Canlis has announced the hiring of Brady Williams, a 28-year-old chef who has been cooking at Roberta's in Brooklyn, a wood-fired pizza restaurant with a massive waiting list. Williams will be the sixth chef in the restaurant's 64-year history when he starts work April 13. Williams will take some time to get his sea legs before putting his touches on the menu.
