From pop-up to Kickstarter, we've been following Rachael Coyle's impending Coyle's Bakeshop for quite some time. Now it is time to mark your calendars and get your lawn chairs ready for the long-awaited opening. As of today, Coyle plans to open for business next Friday, March 13 at 7 a.m. As far as the expected lines and waits go, she doesn't know what to anticipate. "I used to have customers who would contact me and ask me to set aside large quantities of their favorite pastry or customers who could come in and buy a huge box of pastries," said Coyle. "Now that I’ll have my own brick and mortar, the lines might be more manageable."
Expect staple items like Coyle’s cult-favorite cretzel (a glorious union between a croissant and pretzel), meringues, croissants, signature four-layer chocolate cake and the beloved passion fruit tart. The rotating menu line-up will also include fruit pastries—seasonal rhubarb, strawberries and raspberries are the likeliest early contenders.
And—down the line—look for savory fare. "I’m planning on incorporating veggies, legumes and salads to the lunch menu, essentially items that will complement a slice of chocolate cake," explained Coyle. Initial hours will be 7 a.m. to 4 p.m. on Friday, Saturday and Sunday. Hours and days of operation will expand soon enough. Check Facebook for the latest. —Jen Chiu
