Throughout the end of March, Li’l Woody’s will invite Maria Hines (Agrodolce, Golden Beetle), Matt Dillon (The London Plane, Bar Sajor), Renee Erickson (Whale Wins, Barnacle), and Brendan McGill (Hitchcock Deli Georgetown, Hitchcock on Bainbridge Island) to make special burgers for a week at a time. Obviously this is not going to be a month of Velveeta and low-grade beef. The burger details from these very talented chefs follow:
1) Hines' Golden Beetle Burger with harissa aioli, pickled serranos, Gruyère Swiss, and a baharat-seasoned patty. There will be sumac-dusted fries on the side.
2) Dillon's Kluck Burger dressed with maple syrup, grilled radicchio, fried chicken skin, Beecher’s Flagship cheese and mayo on a brown butter-grilled bun.
3) Erickson's Green Goddess Burger topped with the green goddess dressing from her cookbook.
4) McGill's Hitchcock Pastrami Burger with Russian dressing, kraut, pastrami, Swiss and mayonnaise.
All of these burgers will build off of a third-pound Northwest grass-fed beef patty. Most of the prices aren't yet solidified but this week's is $9.85.
