Former Anchovies & Olives Chef Popping Up at Bar Sue Sunday

What’s that sound? Another pop-up, coming to Capitol Hill Sunday.

Former Anchovies & Olives and Bar Cotto Chef Zach Chambers is making a home in Bar Sue on Sunday, April 12 with his pop-up, called TBD. This week’s menu is based around Mediterranean and Italian cuisine, with flavors and techniques "from near and far."

Unlike many totally prix fixe pop-ups, Chambers has created an a la carte menu with the option for a dozen or so people to pre-purchase a full tasting menu via mobile app Dyne for $55.

As for what those tastes will be, Chambers says, "The menu will change from week to week. Reservations aren’t required and diners have the ability to order a little or a lot. It’s much more casual for the diner and a really great outlet for me to continually evolve the menu."

Highlights from Sunday’s menu include a scallop crudo with ajo blanco, sumac, green apple, and sherry; seared asparagus with skordalia, toasted pistachios, and a poached egg; and crispy smoked trout with minted peas and buttered barley.

Chambers first started popping up in Bar Sue with a few dinners last November, then held small events at private homes through the winter. He plans to continue Sunday dinners for the foreseeable future, though he’s also shopping around the concept to other spaces for dinners throughout the week.


Prices run $9 to $16 per dish, and 50 guests can be fed at once, with seatings starting at 5 p.m. and running until 9 p.m. Drinks are available from the bar.
