After four years of selling biscuits in farmers markets, Art Stone’s Honest Biscuits will set up shop in Pike Place Market in early June. Based in the atrium of the Economy Building just above the Atrium Kitchen, Honest Biscuits will rotate seasonally through its tried ‘n true favorites (the bacon and Beecher’s MacGregor; the appley MMM Biscuit) as well as fresh flavors and new sandwich combos—including a biscuit with, alas, gravy.
Stone is also confident that "being in a space where we are baking all day every day will inspire some new combinations. I have always been inspired by the farmers and artisans around me"—and that access will multiply at Pike Place. In its new spot, Honest Biscuits will also debut a few sides, desserts, and drinks, which Stone promises, like their biscuits, will be Southern leaning with a Northwest slant.
Though a permanent space was not the original plan (the Honest Biscuits crew had first planned to do a food truck), Stone says, "I am very excited to expand our menu [at Pike Place] as people have been asking for stuff to go with the biscuits for years." Furthermore, he says that while farmers markets will always be a part of the business’s "DNA," he is excited to connect with a new audience, too.
