Chef Edouardo Jordan is striking out on his own with Salare restaurant, set to open in Ravenna this summer. Eater checked in with Jordan and learned he's on track for soft openings the first week of June and opening within the second week.
"Things are on schedule which is a blessing," Jordan says. He's currently working on getting the walls finished and then painted at his space inside the Saxe Building on NE 65th Street. Jordan is fresh off a successful Kickstarter campaign, which raised over $26,000 for Salare's build out.
The menu will involve "traditional cooking, primal techniques and preserving foods following ancient methods," Jordan told Eater in January. Look for house-made charcuterie, salumi, pickles, jam, fresh seafood, local meat, foraged ingredients, and artisanal cheese.
Jordan most recently worked at Bar Sajor, and before that held stints at Herbfarm and Sitka & Spruce.
