Last week, Alinea's Eric Rivera officially teamed with the unstoppable Josh Henderson to help him launch three new Huxley Wallace Collective restaurant concepts coming this year, and to develop his existing projects. An Olympia, WA native, Rivera first met Henderson during his Skillet Street Food truck days, and now returns to Seattle after spending the last three and a half years as idea man, researcher and experience curator for Alinea, Next and Aviary, where he was promoted to director of culinary research operations.
Now Henderson and Rivera are ready to announce names, addresses, logos, and a few more details about their trio of creations in the works.
GREAT STATE BURGER AND SAINT HELENS
Address: 3600 NE 45th St, Ravenna
A classic burger stop, Great State will have locally sourced, value-priced double and singer burgers, fries, onion rings, and shakes served quickly. The adjacent Saint Helens will be an all-day brasserie-style cafe serving pastries, espresso, charcuterie, family-style dinners, and a vast bottled beer selection. Expect a fire pit with outdoor and indoor seating, and bonus: Bike parking. Coming early fall.
NOROESTE AND GREAT STATE BURGER #2
Address: 2021 7th Ave (in the new Amazon building across from FareStart), South Lake Union
Noroeste will offer a small, curated menu of tacos, ceviches, braised meats, and salsas. Anticipate a "sexy late night bar" with elegant lighting and occasional house DJs spinning "old soul with deep bass," and more. Another branch of Great State Burger will open next door. Both coming around October.
Address: 500 9th Avenue Avenue N, South Lake Union
This rotisserie chicken window will serve up half or whole chickens with four to six sauces either "on the side" or "dressed" on the chicken, along with a few rotating sides. The window is planned for end of this year or for January 2016, as part of the Collective's Mercer/Westlake project. Along with the Poulet, the project will feature the restaurant Henderson himself will be based out of, as well as a small bottle shop, and a nano brewery. Official names and logos for these three are still pending.
