Volunteer Park Chef/Owner Ericka Burke reports it will now be a May opening for her new Canal Market, originally slotted to debut in November. The small Portage Bay grocery store will offer a breakfast buffet with a rotating list of homemade toppings for toast and granola, and a deli island with made-to-order salads and sandwiches (inspired by the Oakville Grocery in Yountville, CA). The Market will serve Stumptown coffee and fresh-pressed juice, and stock household essentials, gifts, wine and beer, produce, and pints of artisan ice cream.
Burke has changed her mind on a few of her original ideas from last fall—she has decided against a communal table and candy sold by the pound for now—but when open, she plans use a suggestion jar and let the neighborhood guide her on stocking.
