Grunig sells his incredible baked goods (including massive cinnamon rolls, cookies, croissant donuts, and fresh sourdough loaves) inside the Magpie gift shop on Saturday mornings, and he often sells out. Rather than reinvent the wheel with outlandish pastries, Grunig is baking familiar treats, paying obsessive attention to detail and sourcing ingredients like flour, cream, butter, and eggs locally.
"Every Saturday at my pop up, Pocket Bakery, I get to serve amazing food and connect with people in the Central District. My dream is to be able to do this every day, and Pocket Bakery is the vehicle for that. I want Pocket Bakery to be an enduring neighborhood business that serves the Central District by providing delicious, responsibly sourced food," Grunig wrote on the campaign's website. "Baking is my life and I want to share that with the Central District."
With a just-launched Community Sourced Capital fundraising campaign, Grunig will raise money for new equipment for the permanent bakery he hopes to open in the neighborhood. He's aiming to raise $50,000 by June 10 through zero-interest loans he'll pay back in cash.
