Watch the Making of Cafe Lago's Basil Caramelle with Ricotta

Welcome to The Hot Dish, a behind-the-scenes look at the making of dishes of the moment.

Cafe Lago has been a fixture of Montlake for the past 25 years. "We have been making our pasta by hand since the day we opened in 1990," says Carla Leonardi, the restaurant's chef and owner.

Cafe Lago is currently running a pasta prix fixe to celebrate its anniversary; every Tuesday and Wednesday they're offering a $25 dinner featuring a different pasta each week, along with an appetizer and dessert. "This is our way of saying thank you to the neighborhood for a wonderful 25 years while giving Lago’s pasta chef the chance to really play with his craft," says Leonardi.

In this photo series, Lago's pasta chef creates the cafe's basil caramelle with ricotta and basil, a recent offering at the prix fixe dinner.
