Mobile Mavens, the group behind two already operating food carts, is rolling out an additional two concepts at the end of June. The group currently runs Biscuit Box and POP UP, a bicycle-based cart delivering ice cream, ice cream sandwiches, popsicles, and other cold treats around the city.
They'll soon add GaiBox, a riff on Portland's Khao Man Gai that uses locally-sourced chicken, poached with herbs and spices and served with rice; Lil' Blu, a remodeled 1960s Volkswagen van acting as a "mobile saloon" with craft cocktails, beer, and nonalcoholic mocktails; and Picnic, serving "wholesome, hearty and delectable sandwiches for every season out of its retro camper."
The group is rolling out its new ventures at a launch event on June 30, open to general admission from 6:30 p.m. to 8:30 p.m. at Olympic Sculpture Park.
