Brileys BBQ & Grill Will Open in Lake Forest Park Next Month

It's bringing baby back ribs, beef brisket, Brunswick stew, and more.

Seattle is already smoking with damn good barbecue, and the fire is spreading to the north end next month. The restaurant location most recently housing Rainin' Ribs on Bothell Way will be home to Brileys BBQ & Grill, planning to hit Lake Forest Park by the end of July.

Brileys is the barbecue brainchild of longtime friends Kyle Brierley and Skyler Riley. Brierley brings the front-of-house mojo and beverage program know-how (he just left his 8-year tenure at Kirkland's revered Cafe Juanita, where he was the restaurant's manager and wine director), while Riley brings the smoker savvy and culinary prowess (he was a former general manager at Rainin' Ribs).

Brileys will serve a range of smoked meats and sausages, from baby back ribs to beef brisket. Sides will include Riley's Brunswick stew, dirty rice, chicken andouille gumbo, and more.

The spot doesn't identify with just one type of barbecue, though when pressed, Riley conceded that Memphis-style, with its combination of dry rub and sauce, is what he gravitates towards. The team will also be making their own sauces: "Tomato-based sauces with a Kansas City kick," Riley says. Sides will include Riley's Brunswick stew, dirty rice, chicken andouille gumbo, and more.

There will be 10 rotating wines and craft beers on tap, and not just any plonk. Brierley is working with such esteemed wineries as Mark Ryan and Avennia to source kegged wines. "Imagine a nice big plate of ribs and a cold glass of rosé... I think people will be happy!" he said. Look for special winemaker and brewmaster dinners in the future, paired with whole hogs coming off the smoker.

While the duo awaits delivery of their new smoker, a Southern Pride SPK 500 being shipped from Tennessee, they are working to expand the kitchen, construct a new outbuilding with ventilation for the smoker, and update the dining area. The space includes sweeping views of Lake Washington, and plans are in the works for adding a deck and bar.

Brileys BBQ & Grill will be open Tuesday through Sunday from 11 a.m. to 9 p.m.
