Local Burger is Popping Up with Regional Seafood and More Next Week

Chef Josh Holmes is stepping out of the bun.

Since the Local 360 team opened Local Burger in Bellevue last summer, chef Josh Holmes has become known for his Northwest farm-to-table burgers and, per the company's model, for using 85 to 90 percent of his ingredients within 360 miles. In his new popup the Next Big Thing, ingredients will still be sourced close to home and feature one burger, but also some of the region's non-beef stars.

$35 gets you an amuse of Pleasant View Farms foies gras, geoduck ceviche, a Wagyu beef burger with wild mushroom duxelles, and olive oil cake with pink peppercorn ice cream for dessert. Add $20 and get a whiskey or beer pairing for each course.

The Next Big Thing will take place at Local Burger Thursday, June 18, at 7 p.m. View the full menu and make reservations through Dyne. There are 30 seats for the pop-up and the rest of the restaurant will be open as usual, serving its regular menu.
