Gear up, Redmond: it's time for Scott Staples' (Quinn's, Restaurant Zoe, Uneeda Burger) new Feed Co. Burgers, debuting this Friday (formerly reported as Thursday). As Eater wrote last month, the new 2000-square-foot restaurant is taking over the old Bill the Butcher space (7990 Leary Way NE) in old town Redmond, and will serve up quick-service burgers ranging from $5 (the quarter-pound beef classic) to $14 (six-ounce turkey, lamb, and bison burgers will always be available, and Chinese water buffalo, elk, and other burgers will rotate).
As we know by now from his work at Uneeda and Quinn's, Staples says that with burgers, "I like to push the envelope of almost sloppy... And then some are just sloppy, I can't help it." The bison, which evokes the flavor profile from his mom's burgers growing up, is a personal favorite, as well as the lamb.
A few non-burger sandwiches are also coming, along with fries (sweet potato and regular), onion rings, salads, and a seasonal tempura program with sauces (green beans, squash, broccolini, and more), like Staples has had at Quinn's and Zoe. Drink-wise, Feed Co will have 14 taps with 11 beers (mostly Northwest) cider, root beer, and kombucha; as well as wine by the glass and bottle, and hand-dipped shakes.
With an air of "rural roadside with urban cool," as Staples' wife Heather puts it, Feed Co will seat 50 inside and 30 on the deck out back, with front picnic tables, too. No word yet on who will head up the front and back of the house long term, but Staples will act as general manager for the first few months, and he says that the chefs and GMs at his other restaurants have been huge help in building Feed Co. Regular hours will be 11 a.m. to 9 p.m. daily, but the restaurant will start by opening for dinner Thursday around 5. Watch the restaurant's Facebook page for updates.
[UPDATE Wednesday, 7/29: Now Staples' team reports the restaurant will open to the public Friday at 11 a.m. for lunch, instead of Thursday. All day long on Friday, food will be 50 percent off (drinks full price) for the grand opening.]
