To kick off your week, presenting two new pop-ups from a pair of Michelin-experienced chefs to break in the September calendar.
Mar y Montaña: Thursday, September 10
Will yourself to Spain for the evening in this three-round, nine-dish feast by Tallulah's chef Joe Bayley, set to evoke the flavors and dining aspects of the Basque region. Mar y Montaña means "oceans and mountains," and Bayley says that in the US, "this is bastardized as surf and turf, steak and lobster. What I'm drawing upon is a more nuanced combination of meat and seafood that is used to elevate both: think chorizo with mussels." The chef knows a thing or two about authentic Spanish cuisine: After winning the Food Network's Chopped in 2009, Bayley took his prize money to Spain and honed culinary skills at various restaurants, including the Michelin-starred Ni Neu. In his pop-up, expect a bounty of local seafood, meats, and produce, in tapas like Montado de Pulpo (Spanish octopus salad with sweet and sour pepper), Pintxos Morunos (skewered lamb with Moorish spices, pickled shallot, dried olive), and more.
"I'm enamoured with not the just flavors of Spanish food, but also the casual eating style of Basque tapas bars. I want to give Seattle diners the experience of communal dining with food that comes in rounds, the way people in Spain eat." Canlis' Ty Blana also brings Michelin-starred experience with his four-course farm-to-table feast, packed full of locally sourced ingredients—some sourced from the chef's own land. For $40 per person, expect inventive cuisine like Scallop, Apple, Strawberry, Fennel & Smoked Lava Salt (course 1); Airline Chicken, Miso Mushrooms & Forbidden Rice (course 3); and more, with optional wine and/or cocktail pairings.
