Oh boy, gluten-free folk: Niche cafe and bakery is open on Capitol Hill, reports The Stranger, and it sounds well worth a visit. Perched at 808 12th Avenue across from Seattle University, new Niche is the work of the talented Toby Matasar, who formerly baked for Tom Douglas Restaurants and just came off a decade at West Seattle's recently shuttered Eats Market Cafe.

At Niche, everything is gluten-free, says The Stranger, but there are also vegetarian and Paleo-friendly options (Matasar herself switched to a Paleo diet a few years back). The Stranger's Kathleen Richards enjoyed both the chocolate chip cookie and the salmon toast she sampled on opening day Wednesday, and Matasar told her the roster of baked goods will expand shortly. For those who loved Eats' Spinach Salad and the Veggie Burger, those are also on offer; peruse the full menu here.

Niche's hours are 11 a.m. to 8 p.m. Monday through Saturday (the cafe is closed Sundays). Check out more details on its website.
