Maria Hines’ Golden Beetle Replacement Lands in Ballard

Young American Ale House opens at 4 p.m.

In early September, Maria Hines announced her Ballard Mediterranean restaurant, Golden Beetle, would close up shop and be remade into a gastropub called Young American Ale House. That transformation is now complete and Young American opens today at 4 p.m.

The new concept centers around Hines' commitment to sourcing organic ingredients from local and regional farms whenever possible. Menu items include upscale takes on comfort food like poutine, mac and cheese, chicken pot pie, and more. Lest you worry it's too meat-centric, there are several vegetarian items available, too, like a house veggie burger or veggie pizza with squash, broccolini, red onion, and herbed feta. There are a number of gluten-free items, too. Here's a look at the dinner menu:

On the drinks side, there are seasonal craft cocktails with housemade shrubs, tinctures, and bitters. Twelve taps pour local beer, including rotating seasonal brews from Hilliard's Beer and Fremont Brewing. Look for a weekend brunch to kick off in November.
