Popular as a pop-up and Fremont Sunday Market vendor, Standard Bakery (formerly Pocket Bakery) has settled into a permanent home in South Lake Union.
Owner Josh Grunig originally launched his venture as a Saturday morning pop-up inside a gift shop in the Central District. He expanded with a few retail accounts and started making appearances at the Fremont Sunday Market, all while searching for a permanent location.
The original plan was to open in the Central District, near his legion of fans, but the space he was counting on didn't pan out. Instead, as of February 1, Standard Bakery is open at 400 Fairview in South Lake Union with an array of Grunig's outstanding pastries, breads, cookies, scones, and more. He's also serving coffee and a daily soup, salad, and quiche. You can still find his goods Saturday at the University District Farmers Market and Sunday at the Fremont Sunday Market, too.
Grunig prides himself on intensely local sourcing, using Washington grains, dairy, and more. Look out for the killer organic sourdough loaves, one of his specialties honed in San Francisco.
Open Monday to Friday 7 a.m. to 3 p.m.
