Update, 2/2/16: Eater has learned that Heartwood Provisions is holding soft openings this week leading up to the official opening February 8, the first day reservations will be available.
Originally projected for late last year, new downtown restaurant Heartwood Provisions launches February 8 at First and Spring with a modern menu based around carefully curated food and drink pairings.
Chef Varin Keokitvon and beverage director Amanda Reed have developed dishes with specific cocktails in mind, in order for a dish to enhance the flavors of a cocktail and vice versa.

"All in all we want to make great food and serve it with a well-balanced cocktail that inspires conversation," Keokitvon said. "Amanda and I have worked tirelessly to ensure our guests truly experience the tastes, memories, travels, and ingredients that have shaped our careers."
The restaurant features an 88-seat main dining room with views into the open kitchen. There's also an 11-seat kitchen counter for diners who want to scope things out more closely, including the wood-burning oven.
"Everything we have done in creating this restaurant has been to bring a kitchen and bar together as it has never been done before," said Reed.
In addition to Reed's rotating selection of cocktails featuring seasonal ingredients, housemade syrups, infusions, and tinctures, the restaurant will also pour wine and beer.
Entrees will range between $10 and $40, with beverage pairings priced between $4 and $6. Cocktails can be ordered separately, too, for $10 to $14. Here's a look at the opening menu:
