Vitaly Paley Takes Over Heathman Restaurant; Vegan Supermarket Chain Coming to Portland

Welcome to CascadiaWire, a weekly collection of restaurant news from up-and-down the Pacific Northwest corridor.

DOWNTOWN—The unnerving and veritably jaw-dropping news that The Heathman Restaurant and Bar inside of the iconic Heathman Hotel could be reinvented now has a new and delicious twist: chef Vitaly Paley and his wife and business partner Kimberly Paley have signed a 10-year lease with LaSalle Hotel Properties, the owners of the hotel.

MARKET WATCH—As first reported on Ecowatch, Veganz, Europe's first and largest vegan grocery store chain, will set up shop in Portland sometime this year, and it is bringing a vegan restaurant and shoe store with it. Based in Berlin, Germany, Veganz currently has locations sprouting up across Eastern Europe, and it will soon open shop in the United Kingdom. This will be Veganz' first United States location.

NORTHEAST—€”Did you say foie gras lollipops? Yes, Ataula co-owner and chef José Chesa will serve foie gras lollipops at his new restaurant, Chesa, located at 2200 NE Broadway adjacent to his newly opened 180 churro shack. And you won't have to wait long to try them. Chesa will fling open the doors Tuesday, February 23, at 5 p.m., and you can see the sample menu included in the press release.
