Chef Sam Choy's Poké To The Max food truck just announced it will open a permanent location in Hillman City in May. The Hawaiian food business, run by celebrity chef Choy and partner Max Heigh, may also branch out with locations in Kirkland, West Seattle, and Ballard later in the year.
Choy's food trucks will stay in the rotation, serving places like the South Lake Union neighborhood and Chuck's Hop Shop.
Expect the brick-and-mortar menu to reflect that of the truck, with popular island items like loco moco, kalua pork, shoyu chicken, musubi, and, of course, poke, or raw fish salad.
The restaurant will be located at 5300 Rainier Avenue S.
