Hawaiian-themed food truck Sam Choy's Poké to the Max has put down roots in Hillman City, opening its first brick-and-mortar location over the weekend. Eater took a look inside before the restaurant welcomed its first diners.
The restaurant menu is similar to that of the trucks, with popular island items like loco moco, kalua pork, shoyu chicken, musubi, and, of course, the wildly popular raw fish salad known as poke.
The enterprise is a project of Hawaiian celebrity chef Sam Choy and business partner Max Heigh. Choy is widely credited as the godfather of poke, increasing its popularity by making it available to the mainland masses. The pair hope to keep the ball rolling with locations in Kirkland, West Seattle, and Ballard later this year.
