Two years after leaving The Walrus and the Carpenter to help launch acclaimed Pioneer Square bar Damn the Weather, chef Eli Dahlin is moving on again. Stepping up to take his place as chef de cuisine is Brian Papenfuss, former sous chef at Stateside.
Damn the Weather owner Bryn Lumsden says he's eager to see what Dahlin does next. "Eli has been integral to our development during the most formative years," he tells Eater. "I'm grateful for having worked with such an inspired and professional chef." Dahlin's last day is Friday, June 24.
As for Papenfuss, Lumsden says he's "extremely excited" to have on board a chef who has "worked at some of my favorite places around town (Le Pichet, Wandering Goose, Ma'Ono)."
Don't expect a major overhaul of the food program. "Our menu will remain focused on sharable, adventurous, restaurant-quality bar food," Lumsden says. "We'll continue to serve oysters, handmade burgers, Caesar salad sandwiches, etc., but we'll always be rotating in fresh ideas and local/seasonal food." The bar does have a shiny new website, though, just in time for the summer rush.
