Interbay's Six Spirits has been distilling since 2014, but it hasn't had an official tasting room with set hours until now. As of last week, the distillery is open for tours and tastings Tuesday through Saturday, 11 a.m. to 7 p.m. Right now, you can try its spiced rum, silver rum, apple brandy, and flagship botanical gin while a more extensive aging program gets underway.
The distillery, as you may have gathered from the name, is attached to hard cider producer Number 6 Cider and its affiliated kitchen, Citizen Six, which serves Korean-Mexican mash-ups like bulgogi burritos and a spicy pork sandwich. The apple brandy produced at the distillery uses cider made by Number 6. "We have plans to release new products in the fall, as well as push forward with our long-term plans for a bourbon program," says tasting room manager Bianca Swain.
Tastings and tours are also available outside normal business hours by appointment or for large groups. Six Spirits is even accepting event space rentals on a case-by-case basis.
