Eric Rivera IN as Chef at Tallulah's

Tallulah's has just announced that it will bring on Eric Rivera as its head chef. Rivera moves on from a stint as director of culinary operations and innovation with Josh Henderson's Huxley Wallace Collective, where he oversaw the opening of much-anticipated restaurants Saint Helens, two Great State Burger locations, and Bar Noroeste, all within one month.

Rivera is an Olympia native who trained at the Art Institute of Seattle and cooked at Blueacre before moving to Chicago to eventually work as director of culinary research operations at the respected Alinea restaurant. When he made the move, Eater Chicago suggested he might be one to watch.

Rivera has already rolled out a refreshed seasonal summer menu at Tallulah's with dishes like Neah Bay king salmon with sweet corn custard and Yukon potatoes; ricotta gnudi with chanterelle, corn, and basil pesto; and more.

Perhaps taking a cue from Noroeste's taco-centric menu, Rivera is also rolling out a summertime Taco Tuesday at Tallulah's.
